Healthy Easter Treat: Dark Chocolate Almond Butter Eggs
Easter is a time for sweet treats, but that doesn’t mean you have to sacrifice your healthy eating habits! These homemade Dark Chocolate Almond Butter Eggs are a delicious, nutritious alternative to traditional Easter candy. Made with wholesome ingredients and naturally sweetened, they’re the perfect balance of indulgence and health.
Ingredients:

1/2 cup almond butter (or peanut butter)

2 tbsp coconut flour

2 tbsp maple syrup (or honey)

1/2 tsp vanilla extract

1/8 tsp sea salt

1/2 cup dark chocolate (70% or higher), melted

1 tsp coconut oil

Optional: crushed nuts or shredded coconut for topping
Instructions:

Prepare the Filling: In a mixing bowl, combine almond butter, coconut flour, maple syrup, vanilla extract, and sea salt. Mix until a dough-like consistency forms. If the mixture is too sticky, add a little more coconut flour.

Shape the Eggs: Scoop about a tablespoon of the mixture and roll it into an egg shape. Place each egg on a parchment-lined tray. Repeat until all the mixture is used.

Freeze: Place the tray in the freezer for about 20 minutes, or until the eggs are firm.

Melt the Chocolate: In a microwave or using a double boiler, melt the dark chocolate with coconut oil until smooth.

Coat the Eggs: Dip each frozen almond butter egg into the melted chocolate, ensuring they’re fully coated. Let any excess chocolate drip off before placing them back onto the parchment paper.
