Healthy Easter Treat: Dark Chocolate Almond Butter Eggs

Easter is a time for sweet treats, but that doesn’t mean you have to sacrifice your healthy eating habits! These homemade Dark Chocolate Almond Butter Eggs are a delicious, nutritious alternative to traditional Easter candy. Made with wholesome ingredients and naturally sweetened, they’re the perfect balance of indulgence and health.

Ingredients:

  • 1/2 cup almond butter (or peanut butter)

  • 2 tbsp coconut flour

  • 2 tbsp maple syrup (or honey)

  • 1/2 tsp vanilla extract

  • 1/8 tsp sea salt

  • 1/2 cup dark chocolate (70% or higher), melted

  • 1 tsp coconut oil

  • Optional: crushed nuts or shredded coconut for topping

Instructions:

  1. Prepare the Filling: In a mixing bowl, combine almond butter, coconut flour, maple syrup, vanilla extract, and sea salt. Mix until a dough-like consistency forms. If the mixture is too sticky, add a little more coconut flour.

  2. Shape the Eggs: Scoop about a tablespoon of the mixture and roll it into an egg shape. Place each egg on a parchment-lined tray. Repeat until all the mixture is used.

  3. Freeze: Place the tray in the freezer for about 20 minutes, or until the eggs are firm.

  4. Melt the Chocolate: In a microwave or using a double boiler, melt the dark chocolate with coconut oil until smooth.

  5. Coat the Eggs: Dip each frozen almond butter egg into the melted chocolate, ensuring they’re fully coated. Let any excess chocolate drip off before placing them back onto the parchment paper.

  6. Add Toppings (Optional): While the chocolate is still wet, sprinkle crushed nuts, shredded coconut, or a pinch of sea salt on top.

  7. Set & Enjoy: Let the eggs set in the fridge for about 15–20 minutes, or until the chocolate hardens. Then, enjoy your delicious and healthy Easter treat!
