Rainbow Pasta Salad
A colourful pasta salad that’s both visually appealing and packed with nutrients this one is perfect for the whole family, if you want a healthy lunch to make your co-workers ask for the recipe or a healthy lunch or dinner for your little one this is PERFECT and DELICIOUS.
Ingredients:
- Whole wheat or gluten-free pasta
- Cherry tomatoes, halved
- Diced cucumber
- Sliced bell peppers
- Sweetcorn
- Black olives
- Feta cheese (optional)
- Olive oil and lemon juice dressing
Instructions:
- Cook the pasta according to package instructions, then drain and cool.
- In a large bowl, combine the cooked pasta with the tomatoes, cucumber, bell peppers, sweetcorn, and olives.
- Toss with a dressing made of olive oil and lemon juice.
- Add crumbled feta cheese if desired, and mix well.
- Pack in a lunchbox with a side of fruit or a small yogurt.
