Rainbow Pasta Salad

A colourful pasta salad that’s both visually appealing and packed with nutrients this one is perfect for the whole family, if you want a healthy lunch to make your co-workers ask for the recipe or a healthy lunch or dinner for your little one this is PERFECT and DELICIOUS. 

                                   

Ingredients:

  • Whole wheat or gluten-free pasta
  • Cherry tomatoes, halved
  • Diced cucumber
  • Sliced bell peppers
  • Sweetcorn
  • Black olives
  • Feta cheese (optional)
  • Olive oil and lemon juice dressing

Instructions:

  1. Cook the pasta according to package instructions, then drain and cool.
  2. In a large bowl, combine the cooked pasta with the tomatoes, cucumber, bell peppers, sweetcorn, and olives.
  3. Toss with a dressing made of olive oil and lemon juice.
  4. Add crumbled feta cheese if desired, and mix well.
  5. Pack in a lunchbox with a side of fruit or a small yogurt.
