The Spanish Salad: Ensalada Mixta

Ingredients

  • For the Salad:

    • 1 head of Romaine lettuce, chopped
    • 2 large tomatoes, sliced into wedges
    • 1 red onion, thinly sliced
    • 1 cucumber, peeled and sliced
    • 1 red bell pepper, thinly sliced
    • 1 green bell pepper, thinly sliced
    • 1 cup canned white asparagus, drained and cut into pieces
    • 1 cup canned artichoke hearts, drained and quartered
    • 2 hard-boiled eggs, sliced
    • 1 cup canned tuna, drained
    • 1/2 cup green olives
    • 1/2 cup black olives
  • For the Dressing:

    • 1/4 cup extra virgin olive oil
    • 2 tablespoons red wine vinegar
    • 1 teaspoon Dijon mustard
    • 1 clove garlic, minced
    • Salt and pepper to taste

Instructions

  1. Prepare the Salad:

    • In a large salad bowl, combine the chopped Romaine lettuce, tomato wedges, sliced red onion, cucumber slices, and bell pepper slices.
    • Add the white asparagus and artichoke hearts to the bowl.
    • Gently toss the salad to combine the ingredients evenly.
